- In a blender, combine mixed berries and apple juice. Blend until smooth.
- Pour the puree through a fine mesh strainer into a saucepan to remove seeds and pulp. Press down to extract as much liquid as possible.
- Add honey (or maple syrup), lemon juice, and salt to the saucepan. Whisk to combine.
- Sprinkle gelatin powder evenly over the mixture. Let it sit for 5 minutes to bloom.
- Place the saucepan over low heat and whisk constantly until gelatin is completely dissolved and mixture is smooth (about 3-5 minutes). Do not boil.
- Carefully pour the mixture into silicone molds or a greased 8x8-inch baking dish.
- Refrigerate for at least 2 hours until firm.
- If using a baking dish, cut into squares or use cookie cutters. Remove from molds if used.
- Store in an airtight container in the refrigerator.
Notes
Storage: Keep in an airtight container in the fridge for up to 2 weeks. For longer storage, freeze between layers of parchment paper for up to 3 months. Serving tip: These snacks are soft at room temperature but hold their shape best when chilled. For extra sweetness, you can roll them in a little coconut sugar.
