Ingredients
  

  • 1 cup mixed berries fresh or frozen
  • 1/2 cup apple juice unsweetened
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons gelatin powder beef or fish, ensure gluten free
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt

Method
 

  1. In a blender, combine mixed berries and apple juice. Blend until smooth.
  2. Pour the puree through a fine mesh strainer into a saucepan to remove seeds and pulp. Press down to extract as much liquid as possible.
  3. Add honey (or maple syrup), lemon juice, and salt to the saucepan. Whisk to combine.
  4. Sprinkle gelatin powder evenly over the mixture. Let it sit for 5 minutes to bloom.
  5. Place the saucepan over low heat and whisk constantly until gelatin is completely dissolved and mixture is smooth (about 3-5 minutes). Do not boil.
  6. Carefully pour the mixture into silicone molds or a greased 8x8-inch baking dish.
  7. Refrigerate for at least 2 hours until firm.
  8. If using a baking dish, cut into squares or use cookie cutters. Remove from molds if used.
  9. Store in an airtight container in the refrigerator.

Notes

Storage: Keep in an airtight container in the fridge for up to 2 weeks. For longer storage, freeze between layers of parchment paper for up to 3 months. Serving tip: These snacks are soft at room temperature but hold their shape best when chilled. For extra sweetness, you can roll them in a little coconut sugar.
